Is there a difference between the spam catch rates?

Will there be a mail outage during the migration?
No. The migration is done by redirecting the MX record, and the previous provider is left running for a while; because both paths are open while the DNS change propagates, no message is lost. The outbound side is handled the same way, by changing the server’s outgoing mail setting and rolling it back if needed.
